In our home, popcorn has always been an evening treat. My dear Joe loves to make up batches of his caramel corn from time to time; the children love it more. This isn’t just any recipe. This recipe is one his mother shared with him as a child. I’m constantly reminded of the influence that food has in our relationships and childhood memories. Well, I have seen my Joe make his caramel corn enough times to know how to “whip” this dish up in the kitchen. One evening, a few weeks back, when the children and I were home alone, I did just that. It was an instant success! I have made it several times since!
This is simple so I’ll keep the post short so you can go make a batch for yourself.
Step one:
Make popcorn over the stovetop. Use a large kettle add 2 Tbs of coconut oil. Once the oil is hot add 1/4 cup of organic popcorn, cover, and let pop completely. Remove from heat. Salt with Real Salt and remove any seeds. Spread over a cookie sheet evenly.
Step Two:
Add 2 cups of chopped raw almonds, 1 cup of dried cranberries, 1/2 cup of raw pistachios, 1 cup walnuts, 1 cup of raisins
Step Three:
Using the same pan. Place back over the stove top and turn on high heat. Melt 1 cup of butter with 2 cups of brown sugar. Stir often allowing this mixture to bubble and mix nicely. After a few moments, (you will notice that the mixture is darkening) add 1/4 cup of maple syrup and 2 Tbs of vanilla. Mixture will begin to boil vigorously. Cook until it pulls cleanly away from the side of the pan as you stir continually. Test in cold water to make sure it hardens before dropping to the bottom of the glass.
Step Four:
Pour “candy” over the top of your popcorn/nut/fruit mixture. Gently stir if needed. Allow to sit till cool. Eat and enjoy!
